Fruity, Curdy, Free-From Meringue

Ingredients

Serves 6

  • 4 eggs whites

  • 200 grams caster sugar

  • Parchment/Baking/Grease proof paper

Garnish/Decoration:

  • 300 mls of free from yogurt (or whisked free from double cream, or whisked dairy double cream)

  • 300 grams of your favourite fruits (blueberries, raspberries, strawberries & cherries

  • 6 heaped tbsps. The Cherry Tree Passion Fruit Curd

Method

I like to make my meringues a little gooier on the inside, so this method will achieve just that!

  • Preheat the oven to 150 degrees centigrade.

  • Put the egg whites into a large mixing bowl and whisk until they form stiff peaks that hold their shape (be careful not to over whisk them!).

  • Now add your sugar 1 tbsp at a time, whisking on a medium heat until you achieve a lovely glossy shine.

  • Place your mixture onto a grease proof sheet in whatever fashion you wish.

  • You can create individual meringues or you can create more of a circle (which is what I have done) with little peaks around the edge and a flat(ish) middle for filling with cream and fruit.

  • Once your design is ready, place in the oven and bake for 40 minutes. Remove and leave to cool before decorating.

  • The decoration is not an art – simply smother in your yogurt or cream, then the Passion Fruit curd, then lash on the fruits!
