Ingredients

300g spaghetti (or your preferred pasta)

Olive oil

One small white/red onion, finely chopped

One tin of chopped tomatoes

2 tbsp The Cherry Tree Spicy Tomato & Caramelised Onion Chutney

Salt and pepper, to season

Cheese, to serve
Method

Heat a frying pan and add a generous glug of olive oil. Add your chopped onion and sweat down for several minutes until translucent.

Add the tin of chopped tomatoes and cook on a high heat, stirring every so often for 15-20 minutes, until your tomatoes are thick and have reduced to a sauce like consistency.

Whilst your tomatoes are reducing, cook your pasta. Heat a pan of water until boiling and add a glug of oil and a generous amount of salt.

Cook your pasta according to the packet instructions.

To your reduced tomatoes, add a couple of tablespoons of The Cherry Tree Spicy Tomato & Caramelised Onion Chutney.

Before you drain the pasta, add a couple of ladleful’s of the pasta water – this will make your sauce dreamy and will loosen it a bit!

Add your drained pasta to the sauce and mix well with the sauce.
To serve

Serve your pasta and add a generous serving of cheese and freshly cracked black pepper!
You can always add extras – how about trying this by adding chicken and mushroom for a quick midweek dinner? Or king prawns, fresh chilli and parsley if you’re feeling extra decadent!
